The flavors of the 2009 Cline Cashmere are primarily cherry, red berries, and tart red fruits. This is a full-bodied dry red wine blend with soft tannins, marked acidity, and an extended length. It would probably work with most gilled red meats and certain types of fish, like salmon. On the whole, though, we were disappointed with the 2009 Cline Cashmere. We wanted and expected to enjoy it, but it just didn't do anything for us.
The St. Francis Winery 2008 Chardonnay is a straw-golden color with green-tinged edges and nice clarity. The flavors of this dry, full-bodied Chardonnay are very aromatic and consist mostly of apple, pear, and creamy vanilla. The acidity is strong enough to make the St. Francis Chardonnay quite refreshing.
The Cline Viognier is a full bodied, medium-dry wine with acidity that can range widely from flat to crisp, depending on the circumstances in which you drink it. It's probably a bit more flat when drunk alone, but it acquires some nice crispness when paired with the right foods. The flavors are predominantly floral with just a bit of fruit and a nice mineral edge. One important thing to remember is that the Cline Viognier is much better when served cold - when the temperature of the wine goes up a bit the alcohol becomes too prominent, ruining the flavor.
We tried the Sterling Vintner's Collection 2007 Chardonnay with pasta carbonara, thus testing the Chardonnay with both smoky flavors and creamy textures. We found that the pairing was pretty good — the Sterling Chardonnay was sharper, tarter, and drier when paired with the pasta carbonara, which in turn made eating the pasta more enjoyable.
There's a great combination of berry, strawberry, and even a bit of orange flavors here. The The Pink Truck California 2007 has very soft tannins and very little acidity. Overall the balance between sweetness and dryness is fairly even, perhaps just a little on the sweet side. This makes the wine well-suited to a wide variety of foods and social situations. It's medium bodied with a very short length, making it an easy-going wine and very approachable.
