Color & Clarity
Clear and bright, Wishing 's 2006 Unoaked Chardonnay is medium to pale yellow, almost verging on straw in its color. There's a nice sparkle deep in the center of the wine, promising a refreshing drink.

Nose
The aroma of Wishing Tree's 2006 Unoaked Chardonnay is clean and slightly fruity, reminiscent of apples and perhaps peaches.

Palate
Dry with marked acidity, the Wishing Tree's 2006 Unoaked Chardonnay is characterized by sharp fruit flavors including citrus, tropical fruit, and even pear. All of the fruit flavor is up front, though, and it ends on a more buttery note.

Food Pairing
Wishing Tree's 2006 Unoaked Chardonnay is only fair when combined with swiss and sharp cheddar, but like many Chardonnays it shines when paired with aged Gouda.

Recipes
Wishing Tree's 2006 Unoaked Chardonnay probably won't work as well as most other Chardonnay's in standard recipes because of the lack of typical oak, flavors which people tend to go to Chardonnay for. If, however, you have a recipe which would be harmed by the oak, this would be worth trying.

Unoaked Chardonnay
Chardonnays are typically treated with oak; in fact, most people who like Chardonnay seem to be attracted to the flavors imparted to the wine by the oak. It is possible to find unoaked Chardonnays, though, that present the full fruit flavorings of the Chardonnay grapes without the notes of smoke, toast, and vanilla which tend to be imparted by oak.

The Wishing Tree
The Wishing Tree is a relatively small winery in Western Austrlia run by John Larchet. Only a few of their wines have been imported to the United States, but they all appear to be good values that are worth trying.
