The Paso Robles 2008 Sauvignon Blanc from Robert Hall is a bright straw gold with distinct green edges. It's color depth is fairly pale in nature and it has nice clarity. The flavors of the Paso Robles 2008 slightly fruity, but there is also some herby and mineral edges. It's a medium-to-full bodied wine with marked acidity and it is fairly dry.

Food Pairing: Paso Robles 2008 Sauvignon Blanc
  • Poached Salmon: The Paso Robles 2008 becomes a bit more fruity and maybe sweet when paired with poached salmon, which is especially nice for a summer meal.
  • Garlic Herb Pilaf: When paired with the pilaf, the Paso Robles 2008 becomes a little more mineral in flavor.
  • Dill & Shalot Cream Sauce: When the cream sauce is added to the salmon, the wine becomes more mineral as well as tart and tingly. Whether that's an improvement or not is debatable, but some will like it.
