The 2008 Dynamite Cabernet Sauvignon is a fairly dry, medium-to-full bodied red wine that is high in tannins. The acidity is decent enough but the dryness and strong tannins cause it to really need to be tempered by food - it's not really a wine for sipping on its own. If it weren't for the harshness of the tannins, this Dynamite Cabernet Sauvignon would probably be a much better wine that would pair well with a wider variety of foods.

The aromas of this cabernet sauvignon are fairly mild and consist primarily of red fruit, black berries, creamy toast, and a bit of smoke.

The 2008 Dynamite Cabernet Sauvignon is a fairly dry, medium-to-full bodied red wine that is high in tannins. Pairing Dynamite Cabernet Sauvignon with Cheeses

  • Aged Gouda: The 2008 Dynamite Cabernet Sauvignon makes aged Gouda taste creamier and nuttier, making this a very good pairing to try.
  • Aged Parmesan: The tannins of this cabernet sauvignon become less harsh when the wine is paired with aged Parmesan and since the harsh tannins are the wine's primary flaw this is definitely a pairing to try if you buy this wine.

In general, it would definitely be worthwhile to pair the 2008 Dynamite Cabernet Sauvignon with strong, aged cheeses.

Pairing Dynamite Cabernet Sauvignon with Main Food

  • Caesar Salad: This cabernet sauvignon becomes more acidic when paired with Caesar Salad and the two are acceptable together, but no better.
  • Steak: A good steak makes the 2008 Dynamite Cabernet Sauvignon much more aromatic and fruity. The tannins remain strong, but they are tempered sufficiently by the red meat to be acceptable.
  • Garlic Mashed Potatoes: Pairing the Dynamite Cabernet Sauvignon with mashed potatoes with chives is only fair.

Dynamite Cabernet Sauvignon

The Dynamite Cabernet Sauvignon is a decent wine, but the very strong tannins (and I like strong tannins, as a rule) make it difficult to pair very well. If you have the right food, this wine is probably worth having.
