The texture of the Bonterra Syrah is much thinner than you would expect from how thick it looks, but it's also velvety smooth on the tongue which is quite nice. The flavors of this medium- to full-bodied wine are dominated by fruit but there is also some warm spice at the end.

Pairing Bonterra 2006 Syrah with Cheeses
- Cheddar Cheese: The Bonterra Syrah is fruitier, smoother, and softer tannins when paired with Cheddar cheese. Overall this is an excellent pairing and well worth trying.
- Aged Gouda: This is only a fair pairing and the Syrah doesn't change much when paired with aged Gouda.
- Aged Parmesan: The Bonterra is drier and a little more complex with aged Parmesan.
- Camembert: This pairing is acceptable, with the Syrah getting a smoother finish with Camembert.
Pairing Bonterra 2006 Syrah with Main Dishes
- Sausage: With sausage the Bonterra Syrah becomes drier and the leather notes become a bit more aromatic.
- Steak: With steak the Bonterra Syrah becomes smoother and once again the leather notes become a bit more aromatic.
- Buffalo Chicken: This Syrah is drier and more aromatic when paired with Buffalo chicken. Fortunately, the spininess of the chicken isn't made worse by the alcohol of the wine.
- Sauteed Mushrooms & Onions: This is an unusually good pairing because the mushrooms and onions make the Syrah taste spicier, more complex, and more aromatic.
